If you are like me you are a very, very busy person! Maybe you are a working mom or maybe even a busy stay at home mom with a lot of responsibilities. Either way, you are probably very tired at the end of the day and don’t really feel like cooking a big dinner. Well, I have some recipes that are delicious and the great part is they are so simple to put together and ready to eat in just a manner of minutes.

1. Chicken Quesadillas
Ingredients:
Two medium chicken breast
One package of tortilla’s
One bell pepper
One white onion
Slice of cheese of your choice
One Tablespoon of extra virgin olive oil
Optional: mushrooms and spinach

Directions for cooking:
First cut up all the chicken into cubes. Cut up the bell pepper and onions. Set aside. In a pan heat up the extra-virgin olive oil on medium heat. Put chicken into the heated pan, season with seasonings of your choice. When chicken is at least half way cooked add the bell pepper and onions. Optional: Add mushrooms and spinach. When everything is done remove all ingredients from pan and set aside. Lay a tortilla in bottom of greasy pan, layer cheese of your choice then add removed ingredients. Fold tortilla over. Cook till brown on both sides.
Remove from pan and eat with sour cream on the side. Delicious!

2. Frito Pie Crescent Roll Ring
Ingredients:
Two can of Crescent Rolls
One pound of hamburger meat
One can of fire roasted diced tomatoes
One can of beans
Cheese
Optional: Pepperoni

Directions for Cooking:
Brown hamburger meat in a medium pan. Season with your choice of seasonings. Add can of fire roasted tomatoes and a can of beans. If you want pepperoni add that in at this time as well. While that is simmering. Open crescent rolls, fan out on a pizza pan with pointed end outwards (edges will overlap). Layer meat mixture on overlapped rolls, put cheese on top of mixture. Bake on 375 for about 25 minutes. Enjoy!

3. The Perfect Omelet
Ingredients:
Two Eggs
One-fourth cup of milk
pinch of salt and pepper
Diced Ham
Mushrooms
Scallions
Spinach
Shredded cheese
One tablespoon of extra virgin olive oil
Directions for Cooking:
In a bowl beat up the eggs and milk until foamy. Add the salt and pepper. Set aside. In a pan heat the extra virgin olive oil. Add egg mixture. Let cook till almost done. Add ham and all the veggies. Add cheese. Heat oven on 350. Still the whole pan in oven for about three minutes. Take out of the oven. The omelet should just slide off of the plate when omelet is half way off the pan fold it over to make the perfect omelet. Add cheese and scallions on top of the omelet. Scrumptious!
